For much of the specialty coffee trade, “Guatemalan Antigua” has come to mean almost any coffee from Guatemala. In fact, the coffees grown in the Guatemalan department of Sacatepequez constitute one area of Guatemala and that’s the area of real true Antiguas. When available we buy Antigua San Sebastian or Pucal or Bella Vista. We roast our Antigua’s to a medium chestnut color — not too dark — so we get a light and singularly intense cup of coffee, with a bright finish, without any unroasted coffee notes. When fresh new crop arrives from origin, there can even be a hint of lemon zest in the finish. These coffees are grown at an elevation of 5,000 feet and produces a very small crop of extraordinary coffee.
